- 1 cup buttermilk
- 2 large eggs
- 1 cup breadcrumbs

- Salt and pepper to taste

Instructions
- Prep the Onions:
Peel the onions and cut them into evenly sized chunks. Soak the pieces in ice water for 15 minutes, then pat dry. - Prepare the Breading Station:
- In one bowl, mix flour, paprika, garlic powder, cayenne, salt, and pepper.
- In another bowl, whisk together buttermilk and eggs.
- Place breadcrumbs in a third bowl.
- Coat the Onion Pieces:
Dip each onion piece into the flour mixture, followed by the buttermilk mixture, and finally coat with breadcrumbs. Repeat for a thicker coating, if desired. - Fry the Onion Bites:
Heat oil in a deep fryer or large skillet to 375°F (190°C). Fry the coated onion pieces in batches until golden and crispy (about 2–3 minutes per batch). - Drain and Serve:
Remove the fried bites with a slotted spoon and place them on a paper towel-lined plate. Serve warm with your favorite dipping sauce.
Notes
- For a healthier option, air-fry the bites at 400°F for 8–10 minutes, flipping halfway through.
- Make them gluten-free by using gluten-free flour and breadcrumbs.
