Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together flour, brown sugar, baking powder, salt, and spices.
- Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
- In a separate bowl, mix the pumpkin puree, heavy cream, egg, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined.
- Turn the dough onto a floured surface, knead gently, and shape into a 1-inch thick circle.
- Cut the dough into 8 wedges and place them on the baking sheet.
- Brush the tops with heavy cream or an egg wash.
- Bake for 15-20 minutes, until golden brown.
- Cool slightly before serving.
Notes
- For a vegan version, use plant-based butter, coconut or almond milk, and a flax or chia seed egg.
