Description

Crescent Roll Breakfast Casserole is a simple yet hearty dish that layers flaky crescent rolls with eggs, protein, cheese, and vegetables. It’s perfect for a quick breakfast, weekend brunch, or a crowd-pleasing potluck dish.

Ingredients

Scale
  • 1 (8 oz) can refrigerated crescent roll dough
  • 1 lb breakfast sausage or bacon, cooked and crumbled
  • 6 large eggs
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers (optional)
  • 1/4 cup chopped green onions (optional)
  • Salt and pepper to taste

Instructions

  • Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  • Prepare Crescent Roll Base: Unroll the crescent roll dough and press it into the bottom of the baking dish, sealing any perforations.
  • Cook Protein: Brown the sausage or bacon in a skillet, then drain excess grease.
  • Layer Ingredients: Spread the cooked protein over the crescent dough, followed by diced vegetables and shredded cheese.
  • Prepare Egg Mixture: In a bowl, whisk together eggs, milk, salt, and pepper. Pour the mixture evenly over the layered ingredients.
  • Bake: Place the dish in the oven and bake for 25–30 minutes, or until the casserole is set and the top is golden brown.
  • Serve: Let cool for 5 minutes before slicing. Garnish with green onions if desired.

Notes

  • Pre-bake the crescent roll base for 5 minutes to prevent sogginess.
  • Add your favorite vegetables, like spinach or mushrooms, for extra flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
