For the Gingerbread Cake:

  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons ground ginger

  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 cup molasses
  • 1 cup hot water

For the Cinnamon Molasses Frosting:

  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons molasses
  • 12 tablespoons milk (if needed)

Instructions

  • Prepare the Cake:
    1. Preheat the oven to 350°F (175°C). Grease and flour a 9×9 inch cake pan.
    2. In a bowl, whisk together the flour, ginger, cinnamon, cloves, baking soda, baking powder, and salt.
    3. In a separate large bowl, cream the butter and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
    4. Stir in the molasses. Gradually add the dry ingredients, alternating with hot water, mixing until just combined.
    5. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely.
  • Make the Frosting:
    1. In a medium bowl, beat the cream cheese and butter until smooth.
    2. Gradually add the powdered sugar, beating until light and fluffy.
    3. Add the cinnamon and molasses, mixing well. If the frosting is too thick, add milk a little at a time until the desired consistency is reached.
  • Assemble the Cake:
    1. Once the cake is completely cooled, spread the frosting evenly over the top.
    2. Optionally, garnish with a sprinkle of cinnamon or a drizzle of molasses.

Notes

  • For a more intense ginger flavor, add 1 teaspoon of freshly grated ginger to the batter.
  • This cake can be made a day ahead; store it in an airtight container at room temperature.
