For the Gingerbread Cake:
- 2 1/2 cups all-purpose flour
- 1 1/2 teaspoons ground ginger
- 1 teaspoon ground cinnamon

- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 2 large eggs
- 1 cup molasses
- 1 cup hot water
For the Cinnamon Molasses Frosting:
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 3 cups powdered sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons molasses
- 1–2 tablespoons milk (if needed)
Instructions
- Prepare the Cake:
- Preheat the oven to 350°F (175°C). Grease and flour a 9×9 inch cake pan.
- In a bowl, whisk together the flour, ginger, cinnamon, cloves, baking soda, baking powder, and salt.
- In a separate large bowl, cream the butter and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
- Stir in the molasses. Gradually add the dry ingredients, alternating with hot water, mixing until just combined.
- Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely.
- Make the Frosting:
- In a medium bowl, beat the cream cheese and butter until smooth.
- Gradually add the powdered sugar, beating until light and fluffy.
- Add the cinnamon and molasses, mixing well. If the frosting is too thick, add milk a little at a time until the desired consistency is reached.
- Assemble the Cake:
- Once the cake is completely cooled, spread the frosting evenly over the top.
- Optionally, garnish with a sprinkle of cinnamon or a drizzle of molasses.
Notes
- For a more intense ginger flavor, add 1 teaspoon of freshly grated ginger to the batter.
- This cake can be made a day ahead; store it in an airtight container at room temperature.
